Dubai's dining scene never sits still. Every few weeks a new opening has the whole city booking tables, and May 2026 is a great month — Tokyo-style supper clubs, underground handroll bars and a Parisian-Tuscan stunner have all landed. Here are the five I'd book first, and exactly where to find them.

1. Ramen Hisa — Downtown Dubai

Ramen Hisa (map) sits right by Dubai Opera — perfect pre-show. Ingredients are sourced across Japan, noodles are house-made or egg-based, and the broths go for clarity and depth over heaviness.

2. Suteki — Dubai Harbour

Wagyu is the whole point.

Suteki (map) is where Dubai energy meets Tokyo soul: a Wagyu-only menu in a sultry, gallery-like room that runs like a supper club. One for a special night.

3. Shinobi — Al Wasl Road

Shinobi (map) is an underground handroll bar chasing atmosphere — the mood is shaped as much by the soundtrack and setting as by the food. Intimate and very now.

4. Siena — DIFC

Born in Paris in 2023, Siena (map) brings Tuscan charm laced with French glamour to DIFC — linguine all'astice, the signature Siena rigatoni, and a classic tiramisu.

5. Hey Tiger — Motor City

From the team behind Brass Monkey, Hey Tiger (map) is a self-described modern Asian social house and neighbourhood bar — chilled vibes, good food, easy nights out.

My rule for a new Dubai opening: go in the first month, while the kitchen is hungry to impress.
